Another great video from James Townsend & Son. One of the interesting facts to me from this video is why it was called a pound cake. It actually referred to the measure of the ingredients ~ a pound of butter, a pound of sugar, a pound of flour, a pound of eggs! If you're like me, you're probably wondering how many eggs are in a pound? That would be 8 extra-large, 10 medium, or 12 small (approximately because of size). Now, John says that the recipe is so simple they had to use other 18th century techniques to make it work, and it's not like our pound cakes today - it's more like cupcakes and cookies!
